Cajun Wings Colorado Style
- 4 pounds chicken drummettes
- 1 tablespoon cayenne pepper
- 2 tablespoons paprika
- 2 tablespoons garlic powder
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon onion powder
- 1 tablespoon salt
- 1/2 tablespoon white pepper
- 1/2 tablespoon freshly ground black pepper
- 1/4 cup vegetable oil
- Rinse the drumettes and pat dry.
- In a food processor or blender, combine all of the ingredients expect the oil and chicken. Process until well blended. With the machine on, slowly pour in the oil and process until a thick paste forms.
- In a large bowl, toss the chicken wings with the spice paste until the wings are well coated.
- Cover and refrigerate overnight.
- Preheat the broiler or grill. Grill should be medium hot.
- Arrange wings on a broiler pan 4" from the heat or on the grill cooking grate. Broil or grill, turning once, until nicely browned outside and cooked through, about 20 minutes.
- Serve warm or at room temperature with Ranch and/or Bleu cheese dressing on the side for dipping.
